Wednesday Food: Turkey Burgers

If you've ever had the chance to read the book The Jungle, by Upton Sinclair, you would understand my reason for becoming a strict vegetarian in the 7th grade.  After writing a book report on this classic novel, and doing some pre-Internet research on the subject, I was done with meat.  But that wasn't my only reason, I wanted to be a professional modern dancer!  My adolescent ignorance assumed that all meat was fattening, and cutting it out was a fast track diet.  I thought I had killed two birds with one stone!  My family grew annoyed with my strict eating habits and I was cooking my own meals soon after. 

The vegetarian thing stuck for about 15 years - I knew how to cook for one, made sure I ate enough greens & protein and took a multi-vitamin to cover my bases.  I started eating fish again (mostly out of food boredom), and most recently chicken and turkey.  Ronnie, the meat-lover that he is has made enormous changes in his diet in the last 2 years, but smiled every step of the way!  We have found many common ground dishes that we could both enjoy the taste, and also the knowledge that it's good for us - and this quick dish is one of our favorites!

1lb organic ground turkey 
1 medium egg
1/2 cup seasoned Italian breadcrumbs
1 small onion chopped
3 cloves garlic
1 tsp cayenne pepper
1/4 cup grated Parmesan (optional)
black pepper/ salt/ onion powder/red pepper flake
*1 packet of Lipton onion soup mix (*the special ingredient)

Mix it all up in a bowl, make sure the yolk is broke and the mix is even.  Form into patties onto a hot skillet, or grill.  Both sides shouldn't take longer than 20 minutes.  Our favorite topping is salsa, and on a special Wednesday some fresh cheddar cheese - but you can use any of your favorite condiments with this healthy & yummy meal!

This particular weeknight, sans bun - but you could do just about anything with the burger once you have the mix.  Happy cooking & Happy Wednesday!   I'm working hard to finish a few projects this weekend - there is definitely more to come, so stay tuned!
