Wednesday Food: Not Done with Apples Yet!!

You didn't think that 30lbs. of apples was going to waste, did ya?  We've done a few more things with our copious amounts of fruit. One thing, that was particularly delicious was what I like to call Pork Chop and Apple Chili.  A little bit sweet, but smoky, spicy and lots of veggies to keep you healthy as the weather changes!

Pork Chop and Apple Chili

2 onions, chopped
2 cloves of garlic, chopped
2 t. cumin seeds
1t. paprika
1/2t. red chili powder (more or less depending on your preference for spiciness)
3 celery stalks, chopped
3 carrots, chopped
2 sweet potatoes, chopped (keep the skin on)
3 apples, chopped (keep the skin on)
1 poblano pepper, roasted and chopped
about 1 lb. pork (we used boneless ribs)
2 10oz. cans of kidney beans, drained and rinsed
1 28oz. can of diced tomatoes
spoonful of tomato paste
about 1c. chicken or veggie stock
Salt and pepper, to taste

1) Roast the poblano, over gas stove, till the skin is charred and the flesh is soft.

2)Saute the onions and garlic with the cumin seeds (or powder), red chili powder and paprika.  Let the spices roast and develop flavor.  About 3 minutes

3) Season the pork, with salt and pepper.  Heat a cast iron pan or saute pan and brown the pork on each side till browned.(about 3 minutes)  Turn off the heat and let the pork hang out on the side till your ready to add it to the pot.
4)Add your veggies (celery, carrots, sweet potatoes, apples and poblano) to the pot.  Add the tomato paste and stir.  Let the veggies cook for about 5 minutes.

5) Add the cooked pork, kidney beans and diced tomatoes.  Add just enough stock to cover the veggies and meat in the pot.(about 1 c.)

6) Let the chili cook for about 3 hours till all the veggies are cooked and the flavors have all melded together.  Season with salt and pepper.
7) We topped the chili off with some sharp cheddar cheese.....yumeeee!

Remember, when the kitchen gets too hot, get back in there and keep cooking!
